Our Florida Stone Crabs have arrived for the season, straight from Southern Florida! These crabs are unique, as they’re harvested only for their claws.

 

These crustaceans can regrow their claw once it has been removed. Although both claws can technically be harvested, it’s not a common, proper practice. It can impact the survival rate for the crab and can slow down the regrowth process. After the crab’s claw is taken off, it’s dropped back into the water. The regeneration process can take up to a year.

 

Florida Stone Crabs are considered a special treat, as the claws are rich and sweet in flavor and only available seasonally from October 15–March 15.

Known as a “type of mud crab,” these crabs are specifically found in muddy and sandy bottoms. Their diet includes oysters, snails, small mollusks, and clams.  

 

More than 98% of the Stone Crab that’s caught comes from the Florida area, and the fishery management is the Florida Fish and Wildlife Conservation Commission.
